Bread and Butter Pudding with Apple and Raisins
Rhubarb Crumble

~Bread and Butter Pudding with Apple and Raisin~

What You Need:

Tools:

  • Measuring jug
  • Knife
  • 1 x ½pt, ovenproof dish

Ingredients:
  • 2 slices bread, slightly stale
  • 1oz [25g] butter
  • 1 small cooking apple
  • ½oz [15g] raisins
  • 1 egg
  • Milk
  • 1oz [25g] caster sugar
What To Do:
  1. Grease dish with a little butter. Spread the rest on both sides of the bread.
  2. Remove crusts then cut bread into 4 triangles or quarters depending on shape of dish.
  3. Peel, core and slice apple, put half into dish, sprinkle a few raisins over.
  4. Place half the bread over the layer, then another layer of apple and raisin.
  5. Place the rest of the bread on top with edges overlapping in the centre.
  6. Beat egg and sugar together then make up to ¼pt with milk and pour it gently over the bread.
  7. Top off with the last of the raisins.
  8. Bake for about 30mins at gas mark 5 / 370°F / 190°C until bread is golden brown and liquid is just setting.
  9. Serve straight away.

~Rhubarb Crumble~

What You Need:

Tools:

  • Medium sized pan
  • Knife
  • Fork
  • 1pt ovenproof dish - greased round top half

Ingredients:
  • 150g (6oz) rhubarb washed and chopped
  • 50g (2oz) soft brown sugar
  • 50g (2oz) plain flour
  • 50g (2oz) margarine
  • 50g (2oz) soft brown sugar
  • 25g (1oz) rolled oats
  • ½tsp grated nutmeg
What To Do:
  1. Put rhubarb and sugar in a saucepan with a tblsp water. Cook over a medium heat until starting to soften.
  2. Rub, or chop, the margarine and flour together until the mixture resembles fine breadcrumbs.
  3. Gently stir in the oats, sugar and nutmeg.
  4. Place the rhubarb in an oven proof dish and top with the crumble mixture.
  5. Level top with a fork to leave a pattern of trails.
  6. Sprinkle a little brown sugar over top.
  7. Bake for about 15 - 20mins at gas mark 5 / 370°F / 190°C until golden brown.
  8. Serve straight away with custard, cream, or even ice cream.
